Ingredients

Little smokies and bacon
  • 1 package (14 oz) little smokies
  • 1 lb thin-cut bacon Cut each slice into thirds.
Brown sugar coating
  • 1 cup brown sugar Packed.
  • 0.25 tsp cayenne pepper
  • 2 tbsp butter Melted.

Equipment

  • 1 sheet pan

Method

Prep and preheat
  1. Preheat the oven to 350F and line a sheet pan with foil and parchment.
  2. Wrap each smokie in a piece of bacon and secure it with a toothpick.
Coat and bake
  1. Mix the brown sugar and cayenne pepper, then roll each bacon-wrapped smokie in the mixture to coat.
  2. Arrange the coated smokies on the pan, then drizzle with the melted butter and sprinkle with any remaining sugar.
  3. Bake for 30-35 minutes until the bacon is crisp and the sugar is bubbly and caramelized, keeping the pan in the middle rack for even browning.
Rest and serve
  1. Cool for 5 minutes so the glaze sets, then serve warm.

Notes

For the crispiest bacon, keep the smokies spaced out on the parchment-lined pan so caramelized sugar doesn’t pool too thickly in one spot. Store leftovers in an airtight container in the fridge for up to 3 days; reheat on a baking sheet at 350F until warmed through. Freezing is not recommended because the bacon texture softens after thawing. For a lower-sugar option, replace part of the brown sugar with an equal measure of a brown-sugar-style sugar substitute that bakes/caramelizes (use package directions).
