Ingredients

Russet potatoes
  • 3 lb russet potatoes
Onion
  • 1 onion
Garlic
  • 4 garlic
Chicken broth
  • 4 cup chicken broth
Salt and seasonings
  • 1 tsp salt
  • 1 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp black pepper
Creamy dairy
  • 1 cup heavy cream
  • 8 oz cream cheese
Cheddar
  • 2 cup shredded cheddar
Toppings
  • 1 bacon bits
  • 1 sour cream
  • 1 green onions
  • 1 extra cheddar

Equipment

  • 1 crockpot

Method

Cook the potato base
  1. Add diced russet potatoes, diced onion, minced garlic, chicken broth, salt, garlic powder, onion powder, and black pepper to the crockpot.
  2. Cook on Low for 6-8 hours (or High for 3-4 hours) until the potatoes are fall-apart tender, with the soup gently bubbling.
Make it creamy and cheesy
  1. Use a potato masher to mash about half the soup directly in the crockpot for a thicker, creamy texture.
  2. Add cubed cream cheese and heavy cream, then stir until the cream cheese melts completely.
  3. Stir in shredded cheddar until melted and smooth, then taste and adjust seasoning as needed.
Serve loaded
  1. Serve hot with bacon bits, sour cream, green onions, and extra cheddar piled generously on top.

Notes

For the smoothest soup, keep the heat on Low while melting the cream cheese and cheddar so they dissolve without clumping. Store leftovers in an airtight container in the refrigerator up to 4 days; reheat gently on the stovetop or in the microwave, adding a splash of broth if needed. Freezing is not recommended because dairy can break after thawing. Dietary swap: use half-and-half instead of heavy cream for a lighter result (texture may be slightly less rich).
