Ingredients

Honey Apricot Goat Cheese Spread
  • 8 oz goat cheese softened
  • 4 oz cream cheese softened
  • 2 tbsp milk
  • 0.3333333333 cup apricot preserves
  • 2 tbsp honey
  • 0.25 cup dried apricots finely chopped
  • 2 tbsp pistachios chopped
  • 1 tsp fresh thyme leaves
  • 1 flaky sea salt pinch
  • 1 Crackers or crostini for serving

Equipment

  • 1 stand mixer

Method

Whip the goat cheese base
  1. Beat goat cheese, cream cheese, and milk until light and smooth, scraping the sides as needed so the mixture turns creamy and uniform.
  2. Spread the whipped mixture into a shallow serving bowl and swirl in the center so it’s ready for the apricot topping.
Warm the apricot-honey topping
  1. Warm the apricot preserves with honey for 20-30 seconds, then stir until loose and pourable with a glossy look.
  2. Spoon the apricot-honey over the center of the goat cheese, letting it drift into the swirl.
Finish and serve
  1. Top with dried apricots, pistachios, thyme leaves, and flaky sea salt so the surface shows a mix of colors and crunchy texture.
  2. Serve with crackers or crostini around the bowl for dipping and easy grabbing.

Notes

For the smoothest texture, use cheeses at room temperature and keep beating until no lumps remain. Assemble up to 24 hours ahead, cover, and refrigerate; bring to cool room temperature for 15–20 minutes before serving for best spreadability. Freezing is not recommended because the preserves and dairy can separate after thawing. Dietary swap: use lactose-free cream cheese and goat cheese to make it lactose-friendly while keeping the same flavor profile.
