cream of celery soup
  • 1 can (10.5 oz) cream of celery soup
garlic powder
  • 1 tsp garlic powder
onion powder
  • 1 tsp onion powder
egg noodles
  • 8 oz egg noodles (added last 30 min)
shredded cheddar
  • 1.5 cup shredded cheddar (added at end)
sour cream
  • 0.5 cup sour cream (added at end)
salt and pepper
  • 1 Salt and pepper to taste

Equipment

  • 1 Dutch oven

Method

Load the slow cooker
  1. Place raw chicken in the Crockpot, then add carrots, celery, onion, garlic, chicken broth, cream of chicken soup, cream of celery soup, garlic powder, and onion powder. Stir briefly so the chicken is surrounded by the creamy broth base.
  2. Cover and cook on Low for 5-6 hours, or on High for 3 hours, until the chicken is tender. The sauce should look creamy and lightly bubbling at the edges.
Shred and finish
  1. Remove the chicken, shred it, and return the shredded chicken to the pot. The soup should be glossy and thick around the vegetables.
  2. Add broccoli and egg noodles, then cook on High for 25-30 minutes until the noodles are tender and the broccoli is bright green. Look for broccoli that stays vivid green and noodles that soften fully.
  3. Stir in shredded cheddar and sour cream until melted and smooth. The broth should turn uniformly golden and thick enough to lightly coat a spoon.
  4. Season with salt and pepper to taste. Give it a final stir and adjust seasoning so flavors pop without dullness.

Notes

Pro tip: keep the noodles to the last 25-30 minutes on High so they don’t get mushy. Store leftovers in an airtight container in the refrigerator up to 3-4 days; freeze is not recommended because noodles and dairy can change texture. For a lighter option, use reduced-fat cheddar and low-fat sour cream to keep the creamy finish.
