Ingredients
  

sourdough bread
  • 4 slices sourdough bread Use 4 slices for 2 sandwiches.
brie cheese
  • 6 oz brie cheese Slice before assembling.
fresh blackberries
  • 0.5 cup fresh blackberries Keep whole so they show between layers.
balsamic glaze
  • 2 tbsp balsamic glaze You’ll use it for layering plus a finishing drizzle.
butter
  • 2 tbsp butter Softened for easy spreading.
arugula
  • 1 Fresh arugula (optional) Optional; add a handful for peppery crunch.
honey
  • 1 Honey for drizzling Optional to taste, for finishing.

Method
 

Assemble the sandwiches
  1. Butter one side of each bread slice generously so it browns evenly in the skillet.
  2. Place two slices butter-side down and layer with brie cheese, fresh blackberries, and a drizzle of balsamic glaze.
  3. Add arugula if desired, then top with the remaining bread slices, butter-side up.
Grill and finish
  1. Heat a skillet over medium heat and cook sandwiches for 4-5 minutes per side until golden brown.
  2. Press gently with a spatula while cooking to help the cheese melt evenly and hold the layers together.
  3. Remove from the heat, drizzle with honey and additional balsamic glaze, then slice and serve immediately while the cheese pulls.

Notes

For the best melt, let the buttered bread face contact the hot pan right away and press lightly once after flipping. Store leftovers in the refrigerator up to 2 days, then reheat in a skillet to re-melt; freezing isn’t recommended because the brie texture can turn grainy. If you want a lighter option, use part-skim brie while keeping the same balsamic-and-blackberry layering.
