Ingredients

bread
  • 8 bread
cheese
  • 8 American, cheddar, or Swiss Use slices.
butter
  • 4 tbsp butter Softened.

Equipment

  • 1 cast iron skillet

Method

Prepare the sandwiches
  1. Butter one side of each bread slice generously. Make sure the entire surface is coated so the bread turns golden.
  2. Place cheese between two slices of bread with butter on the outside. Press lightly so the sandwiches hold together for grilling.
Grill and melt the cheese
  1. Place the sandwiches on a campfire grate or in a cast iron skillet over medium heat. Keep the heat at medium so the bread browns without burning while the cheese melts.
  2. Cook for 4-5 minutes per side until bread is golden brown and cheese is melted. Watch for browning on the first side, then flip when the surface looks crisp.
Serve
  1. Remove from heat, cut in half, and serve hot. Look for a cheese pull when you separate the halves.

Notes

For the best melt, keep the heat at medium and flip only once; if using a very open flame, move the grate slightly to control browning. Store leftovers covered in the fridge for up to 2 days and reheat in a skillet to re-crisp the bread. Freezing is not recommended because the bread texture changes after thawing. Dietary swap: use dairy-free butter and sliced dairy-free cheese for a lactose-free version, though melt quality may vary.
