Marinade
  • 0.25 cup olive oil
  • 3 tbsp lemon juice
  • 1 tbsp lemon zest
  • 4 clove garlic minced
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp red pepper flakes

Method
 

Make the marinade
  1. Whisk olive oil, lemon juice, lemon zest, minced garlic, Dijon mustard, and honey together until emulsified, 30 seconds to 1 minute. Look for a uniform, slightly thickened sheen.
  2. Whisk in dried oregano, dried thyme, smoked paprika, salt, black pepper, and red pepper flakes until evenly distributed. The mixture should look speckled and cohesive.
  3. Add boneless skinless chicken thighs to the marinade and toss to coat completely. Ensure every surface is glossy with marinade.
Marinate
  1. Refrigerate the chicken thighs at 40°F (or colder) for at least 2 hours, up to 24 hours. Keep the chicken covered so it stays in contact with the marinade.
Cook the chicken
  1. Preheat the grill to medium-high heat, then place the marinated chicken thighs on the grates. Grill 5-6 minutes per side with lid closed if possible for clear grill marks.
  2. Alternatively, pan-sear in a hot oiled cast iron skillet over medium-high heat. Cook 5-6 minutes per side until browned with caramelized char marks.
  3. Cook until the internal temperature reaches 165°F. The surface should be caramelized with visible char along the edges.
Rest and serve
  1. Rest the cooked chicken thighs for 5 minutes before serving. This helps the juices settle so the texture stays tender.
  2. Serve with fresh herbs for a bright finish. Add herbs right before eating for the best aroma.

Pro tip: if using bone-in or very thick thighs, add a few extra minutes per side to reliably hit 165°F. Refrigerate leftovers in a sealed container for up to 3 days; freeze cooked chicken for up to 2 months.
