Ingredients

Fresh cranberries
  • 12 oz fresh cranberries
Sugar
  • 0.75 cup sugar
Orange juice
  • 1 cup fresh orange juice
Orange zest
  • 1 tbsp orange zest
Orange segments
  • 1 orange, peeled and segmented
Salt
  • 0.25 tsp salt pinch

Equipment

  • 1 saucepan

Method

Simmer the sauce
  1. Bring the sugar and fresh orange juice to a boil in a saucepan over medium-high heat, stirring until the sugar dissolves. Visual cue: you should see steady bubbling across the surface.
  2. Add the fresh cranberries and a pinch of salt, then reduce to a gentle simmer. Visual cue: bubbles should be slower and smaller around the berries.
  3. Simmer for 10 minutes, stirring occasionally, until most of the berries burst and the sauce looks thicker. Visual cue: cranberries will be split and suspended in bright ruby sauce.
Finish and chill
  1. Remove the saucepan from the heat and stir in the orange zest. Visual cue: the sauce will turn more fragrant and slightly more vibrant.
  2. Cool slightly, then gently fold in the peeled and segmented orange. Visual cue: orange segments should remain intact and evenly scattered.
  3. Chill until serving, keeping the sauce covered in the refrigerator. Visual cue: it thickens to a spoonable, glossy consistency.

Notes

For the best texture, simmer just until most berries burst—avoid boiling hard the whole time, or the fruit can break down too much. Store covered in the refrigerator for up to 5 days. Freeze for up to 1 month (thaw overnight in the fridge, then stir; texture softens slightly). For a lighter option, reduce sugar to 1/2 cup and increase orange juice by 1–2 tbsp if needed, tasting after simmering.
