Ingredients

Green beans
  • 1.5 lb fresh green beans, trimmed
Bacon
  • 8 slices bacon, halved crosswise
Butter
  • 0.25 cup butter, melted
Brown sugar
  • 0.333 cup brown sugar
Garlic
  • 2 clove garlic, minced
Soy sauce
  • 1 tbsp soy sauce
Black pepper
  • 0.25 tsp black pepper

Equipment

  • 1 sheet pan

Method

Blanch and prep
  1. Preheat oven to 400F. Blanch green beans in boiling water for 3 minutes, then plunge into ice water and drain.
Wrap and glaze
  1. Gather 8-10 green beans into a bundle, then wrap with a half slice of bacon and place seam-side down in a baking dish.
  2. Whisk melted butter, brown sugar, garlic, soy sauce, and black pepper until combined.
  3. Pour the glaze evenly over the bundles so they look glossy.
Bake and finish
  1. Bake at 400F for 25-30 minutes until the bacon is crisp and the glaze is bubbly.
  2. Spoon pan glaze over the bundles and serve warm.

Notes

For the cleanest texture, make sure the green beans are fully drained after the ice bath so the glaze clings instead of sliding. Store leftovers in the fridge up to 3 days in an airtight container; rewarm in a 350F oven until heated through. Freeze is not recommended because the bacon texture and green bean crispness soften after thawing. For a soy-free option, swap the soy sauce for an equal amount of coconut aminos.
