Ingredients

Chicken thighs
  • 2 lb bone-in chicken thighs
Vegetables and aromatics
  • 4 carrots, sliced
  • 4 celery, sliced
  • 1 onion, diced
  • 8 cloves garlic, minced
  • 2 tbsp fresh ginger, grated
Broth and seasonings
  • 8 cup chicken broth
  • 1 tsp turmeric
  • 1 tsp dried thyme
  • 0.25 tsp black pepper
  • 0.25 tsp cayenne
  • 1 tsp lemon juice
  • 1 tbsp apple cider vinegar
  • 1 tbsp honey
  • 1 Salt to taste
Noodles and greens
  • 2 cup kale or spinach, chopped
  • 8 oz egg noodles
Serving
  • 1 Fresh parsley and lemon for serving

Equipment

  • 1 Dutch oven

Method

Build the soup base
  1. In a large pot, combine the chicken thighs, carrots, celery, onion, garlic, ginger, chicken broth, turmeric, dried thyme, black pepper, and cayenne. Bring the pot to a boil, then reduce to a steady simmer.
  2. Simmer 30 minutes, until the chicken is very tender. Keep the surface gently bubbling so the vegetables soften evenly.
Shred and cook the noodles
  1. Remove the chicken from the pot, shred the meat, and discard bones and skin. Return the shredded chicken to the broth.
  2. Add the egg noodles and cook 6-8 minutes, until tender. Stir occasionally so the noodles don’t stick.
Finish with greens and flavor
  1. Stir in the kale and cook 3 minutes, until wilted. The broth should look slightly thicker and more vibrant.
  2. Add the lemon juice, apple cider vinegar, and honey, then season with salt to taste. Taste and adjust so the flavor balances bright lemon with gentle sweetness and heat.
Serve
  1. Ladle the soup into bowls and top with extra lemon wedges and fresh parsley. Serve hot for the best broth flavor.

Notes

For the deepest flavor, simmer at a steady low boil rather than a hard rolling boil so the chicken stays tender. Store leftovers in the fridge up to 3 days; reheat gently on the stovetop until warmed through. Freezing is best without adding noodles—if you freeze, cook noodles separately and combine when reheating. For a lighter option, swap half the chicken thighs for skinless breast and use reduced-fat chicken broth.
