Ingredients
  

Bone-in skin-on chicken thighs
  • 4 bone-in skin-on chicken thighs Use 4–6 thighs; adjust sauce consistency with an extra splash of broth if needed.
Creamy white wine sauce base
  • 1 cup dry white wine
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 2 shallots, minced
  • 4 garlic, minced
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 2 tsp fresh thyme
  • 1 tsp fresh rosemary, chopped
  • 1 tsp Dijon mustard
  • 1 salt and pepper Season in steps; use to taste.

  • 1 fresh parsley for serving Add at the end for brightness.

Method
 

Preheat and prep
  1. Preheat the oven to 400F. Season the chicken thighs with salt and pepper.
  2. Heat the unsalted butter and olive oil in a Dutch oven over medium-high heat. Sear the chicken skin-side down for 6 minutes until the skin is golden, then remove to a plate.
Build the white wine sauce
  1. Sauté the minced shallots for 3 minutes until softened. Add the minced garlic, fresh thyme, and chopped rosemary and cook for 1 minute.
  2. Deglaze with the dry white wine and simmer for 3 minutes, scraping up browned bits from the pan.
  3. Stir in the chicken broth, heavy cream, and Dijon mustard. Bring everything to a simmer.
Roast and finish
  1. Return the chicken to the Dutch oven skin-side up. Transfer to the oven and bake for 25-30 minutes until golden and cooked through.
  2. Garnish with fresh parsley and let rest briefly before serving.

Notes

Pro tip: Keep the sear time to 6 minutes so the skin turns deeply golden without burning; if the sauce thickens too much after simmering, loosen it with 2–4 tbsp broth. Refrigerate leftovers in an airtight container for up to 3 days; freeze the chicken and sauce for up to 2 months. For a dairy-reduced option, swap heavy cream for half-and-half and reduce simmer time by a few minutes to prevent curdling.
