chicken thighs
  • 4 bone-in or boneless chicken thighs Use 4–6 thighs depending on size; keep as even as possible for consistent tenderness.
honey garlic sauce
  • 0.333 cup honey For the sweet, sticky sauce base.
  • 0.25 cup soy sauce Adds savory depth and helps balance the honey.
  • 6 garlic, minced Freshly minced for a stronger aroma in the slow cooker.
  • 2 tbsp butter Helps round out the sauce and adds silkiness.
  • 1 tbsp apple cider vinegar Brightens the sauce and keeps it from tasting overly sweet.
  • 0.5 tsp red pepper flakes Adjust heat to taste.

Method
 

Make the sauce and cook
  1. Combine honey, soy sauce, garlic, butter, apple cider vinegar, and red pepper flakes in the slow cooker and stir until the butter softens into the mixture.
  2. Add the chicken thighs and turn to coat thoroughly in the honey-garlic sauce.
  3. Cook on Low for 4–5 hours (or High for 2–2.5 hours) until the chicken thighs are very tender and easily pull apart.
Thicken and finish
  1. Remove the chicken to a plate, then stir the cornstarch slurry into the sauce until no dry streaks remain.
  2. Turn the slow cooker to High and cook for 15 minutes until the sauce is thickened and glossy.
  3. Return the chicken thighs to the sauce and coat them, then serve over steamed rice with green onions and sesame seeds for garnish.

Notes

For the best glossy finish, slurry the cornstarch with cold water before adding, then cook on High the full 15 minutes so it thickens. Refrigerate leftovers in an airtight container up to 3 days; reheat gently on the stove or in the microwave with a splash of water. Freezing is not recommended due to sauce texture after cornstarch. For a lower-sugar option, use a sugar-free honey substitute while keeping the same method and timings.
