  • 5 bone-in skin-on chicken thighs Use 4 to 6 thighs; bone-in and skin-on helps the glaze caramelize.
honey mustard glaze
  • 0.3333333333 cup Dijon mustard Provides the tangy base for the glaze.
  • 3 tbsp honey Sweetens and caramelizes the coating in the oven.
  • 2 tbsp whole grain mustard Adds texture from mustard seeds.
  • 2 tbsp olive oil Helps the glaze cling to the chicken.
  • 3 garlic Minced; about 3 cloves.
  • 1 tbsp lemon juice Brightens the flavor.
  • 1 tsp fresh thyme Leaves or chopped; stems removed if tough.
  • 0.25 tsp salt To taste; use about a pinch per side depending on thickness.
  • 0.25 tsp pepper To taste; black pepper.
  • 1 fresh thyme For garnish at the end.

Method
 

Preheat and season
  1. Preheat oven to 425F. Season the chicken thighs with salt and pepper.
Make the honey mustard mixture
  1. Whisk Dijon mustard, honey, whole grain mustard, olive oil, garlic, lemon juice, and thyme together until smooth. The mixture should look thick and glossy.
Coat and bake
  1. Coat the chicken thighs generously with the honey mustard mixture and place them in a baking dish. Make sure the glaze covers the skin side well.
  2. Bake for 30-35 minutes at 425F until the glaze is deeply caramelized and the chicken reaches 165F. The surface should be bronze-gold with slightly darkened edges.
Broil and finish
  1. Broil for 2-3 minutes until the glaze gets extra caramelized. Watch closely to prevent burning.
  2. Garnish with fresh thyme and serve right away. Let it rest 3-5 minutes so juices settle.

Notes

For best caramelization, keep the thighs skin-side up and don’t rinse them before baking. Refrigerate leftovers in a covered container for up to 3 days; reheat in a 400°F oven until warmed through. Freezing: no (the glaze and skin texture soften after thawing). For a lighter option, use reduced-sugar honey or a low-sugar honey substitute; flavor stays tangy with the mustard balance.
