Ingredients

Chicken
  • 1.5 lb chicken breast or thighs
Vegetables and aromatics
  • 4 carrots, sliced
  • 3 celery, sliced
  • 1 onion, diced
  • 6 garlic, minced
  • 2 tbsp fresh ginger, grated
  • 2 cup shiitake or cremini mushrooms, sliced
  • 2 cup kale or spinach, chopped
Broth and seasonings
  • 8 cup chicken broth
  • 1 tsp turmeric
  • 1 tsp dried thyme
  • 0.25 tsp black pepper (activates turmeric)
  • 1 tbsp lemon juice
  • 0.25 salt to taste
Noodles and serving
  • 8 oz egg noodles
  • 1 fresh parsley and lemon for serving

Equipment

  • 1 Dutch oven

Method

Simmer the chicken soup base
  1. In a Dutch oven, bring chicken broth, carrots, celery, onion, garlic, ginger, turmeric, dried thyme, and black pepper to a simmer over medium-high heat. Maintain a gentle simmer at 200°F–210°F (93°C–99°C) and cook for 20 minutes, until the chicken is cooked through.
  2. Remove the chicken to a plate and shred it with two forks, then return the shredded chicken to the pot. Stir to redistribute the aromatics and broth.
Add mushrooms and noodles
  1. Add the sliced mushrooms and cook at a steady simmer for 5 minutes, until they soften and release moisture. Keep the broth bubbling gently.
  2. Add the egg noodles and cook for 6–8 minutes until tender, stirring once or twice to prevent sticking. Simmer at 200°F–210°F (93°C–99°C) until the noodles reach your preferred texture.
Finish with kale and lemon
  1. Stir in the chopped kale (or spinach) and lemon juice, then cook for 3 minutes until the kale is wilted. The soup should look vibrant and slightly thicker from the noodles.
  2. Season with salt to taste, then serve hot with fresh parsley and lemon wedges. Taste once more at the table and adjust salt or lemon if needed.

Notes

Pro tip: Use a gentle simmer (not a rolling boil) so the carrots and celery stay tender and the turmeric keeps its warm color. Refrigerate in an airtight container for up to 4 days; reheat on the stovetop over medium until steaming. Freezing: yes, but for best texture freeze without the noodles (cook noodles fresh when reheating). Dietary swap: use gluten-free egg noodles if you need a gluten-free option.
