Ingredients

Chicken thighs
  • 5 bone-in chicken thighs
Seasonings and gravy
  • 1 packet (1 oz) ranch seasoning mix
  • 1 packet (1 oz) au jus gravy mix
Butter and pepperoncini
  • 4 tbsp unsalted butter cut into pieces
  • 6 whole pepperoncini peppers
  • 0.25 cup pepperoncini brine
Serving and garnish
  • 1 mashed potatoes or egg noodles for serving
  • 0.25 g fresh parsley for garnish

Equipment

  • 1 slow cooker

Method

Slow-cook the chicken
  1. Place the bone-in chicken thighs in the slow cooker in a single layer. Keep them spaced so the seasonings can reach all sides.
  2. Sprinkle the ranch seasoning mix and au jus gravy mix evenly over the chicken. Aim for an even coverage so every piece gets flavor.
  3. Place the unsalted butter pieces on top of the chicken. The butter should sit on the surface to help form the glossy sauce.
  4. Arrange the whole pepperoncini peppers around the chicken and pour the pepperoncini brine over. Make sure some brine pools around the sides for maximum tang.
  5. Do not stir; cook on Low 5-6 hours or High 2.5-3 hours until fall-apart tender. You should see the chicken easily separate with a gentle pull.
Finish and serve
  1. Gently shred the chicken in the slow cooker and stir it into the rich buttery sauce. Mix just until the chicken is coated, keeping the sauce thick and glossy.
  2. Serve the chicken over mashed potatoes or egg noodles and top with fresh parsley. Add parsley right before serving for a fresh color and aroma.

Notes

Pro tip: keep the “do not stir” phase untouched so the gravy forms a thick, pepperoncini-tangy sauce. Refrigerate leftovers in a sealed container for up to 4 days; reheat gently until hot, adding a splash of brine or water if needed. Freezing is yes—freeze for up to 3 months and thaw overnight in the fridge. For a lower-carb option, serve over mashed cauliflower instead of mashed potatoes.
