Method
Brown the beef
- Season the beef cubes with salt and black pepper, then toss with the flour until evenly coated.
- Heat butter and vegetable oil in a Dutch oven, then brown the beef in batches over medium-high heat until deeply golden, turning as needed to color all sides.
Cook the aromatics
- Add the chopped onions and sliced leeks to the same Dutch oven and cook for 6 minutes, stirring, until soft.
- Pour in the Scottish ale (or extra beef broth) and scrape up the browned bits from the bottom of the pot.
Simmer the stew
- Add the beef broth, Worcestershire sauce, and dried thyme, then return the browned beef to the pot.
- Bring to a gentle simmer, cover, and simmer for 1 1/2 hours, stirring occasionally so nothing sticks to the bottom.
Finish with barley and vegetables
- Stir in the rinsed pearl barley, cubed turnip (or swede), and sliced carrots.
- Simmer uncovered or partially covered for 45-60 minutes, until the barley and beef are tender and the gravy has thickened.
- Taste and season to adjust, then top with chopped fresh parsley before serving.
Notes
For the best thick brown gravy, brown the beef well in batches so the pot doesn’t steam; scrape up every browned bit when adding the ale. Refrigerate leftovers in a sealed container up to 4 days; reheat gently on the stove or in the microwave. Freezing is yes—freeze up to 3 months and reheat until hot, adding a splash of broth if it thickens too much. Dietary swap: use gluten-free all-purpose flour in place of regular flour for thickening and keep the Worcestershire sauce gluten-free.
