Method
Roast the sausage
- Preheat oven to 400F and line a rimmed sheet pan with foil for easy cleanup.
- Spread smoked sausage coins in a single layer, then roast for 12 minutes until browned at the edges (visual cue: edges turn deep golden).
Make and apply the cranberry glaze
- Whisk whole berry cranberry sauce, brown sugar, Dijon mustard, apple cider vinegar, garlic powder, and red pepper flakes until smooth.
- Pour glaze over the hot sausage and toss to coat thoroughly (visual cue: coins look glossy and evenly covered).
Finish roasting and serve
- Roast 10-13 minutes more at 400F until glaze is sticky and bubbling (visual cue: syrupy bubbles cling to sausage).
- Toss with orange zest and fresh thyme leaves, then serve warm with toothpicks.
Notes
For the stickiest coating, toss the sausage with the glaze right after the first 12-minute roast so it clings before the second roasting. Store leftovers in the refrigerator up to 3 days; reheat on a sheet pan at 350F until hot and glossy. Freezing is not recommended because the cranberry sauce can become grainy after thawing. For a lower-sodium option, choose reduced-sodium smoked sausage and reduced-sodium cranberry sauce while keeping the same bake times.
