Equipment

  • 1 Dutch oven

Method

Simmer spiced cider
  1. In a Dutch oven, simmer apple cider, cinnamon sticks, star anise, whole cloves, and brown sugar for 10 minutes over medium heat until fragrant. Visual cue: the surface should show gentle bubbling around the spices.
Strain and chill
  1. Strain the spiced cider through a fine sieve, then chill completely. Visual cue: it should look clear and cold before assembling the drinks.
Assemble the prosecco
  1. Rim six champagne flutes with cinnamon sugar. Visual cue: the rim should show an even ring of sugar.
  2. Pour 2 tablespoons of spiced cider into each flute. Visual cue: you should see a small pool of golden syrup at the bottom of every glass.
  3. Top each flute with chilled prosecco and garnish with an apple slice, then serve. Visual cue: bubbles rise immediately and the apple slice floats at the surface.

Notes

Pro tip: chill the prosecco and the strained spiced cider completely so the bubbles stay lively and the flavor tastes brighter. Store the chilled spiced cider in the refrigerator up to 3 days; freeze only if needed for later (up to 2 months), then thaw in the fridge and re-chill before using. For a lighter drink, use a sugar-free prosecco if available and reduce the brown sugar to 1 tbsp while simmering.
