Make the glaze and marinate
- Whisk sweet chili sauce, soy sauce, rice vinegar, lime juice, garlic, ginger, honey, and red pepper flakes until smooth.
- Marinate the chicken for 30 minutes.
- Preheat the oven to 425F.
Bake until sticky and caramelized
- Place chicken skin-side up in a baking dish and pour the sauce over.
- Bake for 20 minutes, then baste with the sauce.
- Bake for 10 more minutes, until deeply caramelized and sticky.
Broil for extra lacquer
- Broil for 3 minutes until the glaze is extra sticky and caramelized.
Finish and serve
- Garnish with sesame seeds, sliced green onions, and lime wedges.
Notes
For best lacquered results, keep the chicken skin-side up so the glaze clings and reduces where it can caramelize. Store leftovers in the fridge up to 3 days; reheat in a hot oven so the glaze re-sticks. Freezing is not recommended because the skin can lose its crispness. For a gluten-free option, use tamari instead of soy sauce.
