Method
Cook the syrup
- Combine both sugars, water, orange juice, 1/4 cup bourbon, vanilla bean and seeds, and salt in a saucepan over medium-high heat. Bring to a rolling boil, with bubbles that fully cover the surface.
Simmer and thicken
- Add cranberries and return to a boil, stirring to coat. Simmer 10-12 minutes until the berries burst and the sauce thickens to a glossy, spoon-coating consistency.
Finish and chill
- Remove from heat and stir in the remaining bourbon (and vanilla extract if using). The sauce should look darker and slightly thicker immediately after stirring.
- Remove the vanilla pod, then cool the sauce to room temperature. Chill before serving so it sets up and slices or spreads cleanly.
Notes
Pro tip: If the sauce isn’t thickening after 10 minutes, simmer 1-3 minutes longer—cranberries vary, and you want a glossy spoon-coating texture. Store in a covered container in the refrigerator for up to 7 days. Freezing is yes—freeze in small portions up to 2 months, thaw overnight in the fridge. For a lower-sugar option, replace the brown and granulated sugar with a 1:1 baking sweetener designed for jams/sauces (use the same amount) to keep the berry texture.
