Watermelon Sangria

Watermelon sangria is a blush-pink party pitcher drink made with blended watermelon juice, dry rosé (or white wine), and vodka for a refreshing watermelon cocktail vibe. After chilling, it’s finished with club soda and served over ice with mint and citrus slices floating through the rose-tinted base.

Ingredients
  

Watermelon base
  • 2 cup fresh watermelon cubed and seeded; reserve remaining cubes after blending
  • 1 cup fresh watermelon cubed and seeded; additional cubes to keep in the pitcher
  • 1 bottle (750 ml) dry rosé or white wine
  • 0.5 cup watermelon vodka or plain vodka
  • 0.25 cup triple sec
  • 2 tbsp honey or simple syrup
  • 1 lime thinly sliced
  • 1 lemon thinly sliced
  • 1 cup sparkling water or club soda for topping right before serving
  • 0.25 fresh mint sprigs for garnish

Method
 

Blend watermelon juice
  1. Blend 2 cups of watermelon cubes until smooth, then strain through a fine mesh sieve to get 1 cup of fresh watermelon juice.
Mix the sangria base
  1. Combine watermelon juice, rosé wine, vodka, triple sec, and honey in a large pitcher and stir to combine.
  2. Add remaining watermelon cubes, lime slices, and lemon slices to the pitcher.
Chill
  1. Cover and refrigerate for at least 2 hours to chill and allow flavors to meld.
Serve
  1. Right before serving, top with sparkling water, stir gently, and pour into ice-filled glasses.
  2. Garnish each glass with fresh mint and serve immediately.

Notes

Pro tip: strain the blended watermelon so the sangria stays bright and pourable instead of pulpy. Refrigerate covered for up to 2 days; add the sparkling water and mint only right before serving for best bubbles. Freezing is not recommended because the citrus and watermelon texture will soften. For a lighter option, use sparkling rosé in place of some of the wine and reduce the vodka slightly.
