Ingredients

Zucchini
  • 2 zucchini grated and squeezed dry
Corn muffin mix
  • 1 box (8.5 oz) corn muffin mix
Cream-style corn
  • 1 can (14.75 oz) cream-style corn
Frozen corn kernels
  • 1 cup frozen corn kernels thawed
Eggs
  • 2 eggs large
Sour cream
  • 0.5 cup sour cream
Butter
  • 0.25 cup butter melted
Cheddar cheese
  • 1.5 cups shredded cheddar divided
Green onions
  • 2 green onions sliced
Salt
  • 0.5 tsp salt

Equipment

  • 1 sheet pan

Method

Prep
  1. Preheat oven to 350F, then grease a 9x9-inch baking dish with a light coating so the casserole releases cleanly.
  2. Whisk eggs, sour cream, and melted butter until smooth and slightly thick, with no streaks visible.
Mix and bake
  1. Stir in corn muffin mix, cream-style corn, corn kernels, zucchini, 1 cup cheddar, green onions, and salt until evenly combined and the batter looks cohesive.
  2. Pour the mixture into the greased dish, then sprinkle the remaining cheddar evenly over the top.
  3. Bake 40-45 minutes at 350F until golden and set in the center, with the middle no longer wobbly when gently nudged.
Finish
  1. Cool 10 minutes before slicing so the cornbread casserole holds its shape and doesn’t crumble.

Notes

For the best texture, squeeze the grated zucchini very dry to prevent a watery bake. Store leftovers covered in the refrigerator for up to 3 days; rewarm individual portions in the microwave or oven until hot. This freezes well: cool completely, portion, and freeze up to 2 months, then thaw overnight in the fridge and reheat. For a gluten-free option, use a gluten-free corn muffin mix and confirm it’s gluten-free before baking.
