Build the soup base
- In a large pot, combine the chicken thighs, carrots, celery, onion, garlic, ginger, chicken broth, turmeric, dried thyme, black pepper, and cayenne. Bring the pot to a boil, then reduce to a steady simmer.
- Simmer 30 minutes, until the chicken is very tender. Keep the surface gently bubbling so the vegetables soften evenly.
Shred and cook the noodles
- Remove the chicken from the pot, shred the meat, and discard bones and skin. Return the shredded chicken to the broth.
- Add the egg noodles and cook 6-8 minutes, until tender. Stir occasionally so the noodles don’t stick.
Finish with greens and flavor
- Stir in the kale and cook 3 minutes, until wilted. The broth should look slightly thicker and more vibrant.
- Add the lemon juice, apple cider vinegar, and honey, then season with salt to taste. Taste and adjust so the flavor balances bright lemon with gentle sweetness and heat.
Serve
- Ladle the soup into bowls and top with extra lemon wedges and fresh parsley. Serve hot for the best broth flavor.
Notes
For the deepest flavor, simmer at a steady low boil rather than a hard rolling boil so the chicken stays tender. Store leftovers in the fridge up to 3 days; reheat gently on the stovetop until warmed through. Freezing is best without adding noodles—if you freeze, cook noodles separately and combine when reheating. For a lighter option, swap half the chicken thighs for skinless breast and use reduced-fat chicken broth.
